After a long day of salt and sun, the best post-dive dinner is definitely “Souped-up Mac N’ Cheese.”
This straight-up comfort food takes about 15 minutes to prepare and will fatten you up for another day of diving! This recipe serves 2-3 people or 1 hungry diver a ginormous meal plus some next-day lunch leftovers while topside on the boat.
- 4+ strips of bacon (or sausage, ham, turkey)
- 4 green onions
- 2 tomatoes
- 1 bell pepper
- Minced garlic
- Salt
- Pepper
- Paprika
- 1 box of your preferred store-bought mac n’cheese
Cook bacon (or other meat) and cut into tiny pieces. Chop vegetables and sauté with spices. Cook mac n’ cheese as directed, then mix in bacon and vegetables. Enjoy!
